Vegetarian Taco Pie
Ingredients:
-2 deep dish pie shells
-1 bag Morningstar crumblers
-1 cup chopped onion
-1 packet taco seasoning (I used Old El Paso)
- 1/4 cup minced Garlic
- 2/3 cup diced tomatoes
-1 can vegetarian refried beans (2 cups)
-1 & 2/3 cups of shredded Mexican blend cheese. Split into four portions.
Toppings
- Salsa
- Guacamole
- Sour Cream
This recipe makes enough filling for two deep dish pie shells.
Preparation:
Preheat oven to 350 degrees.
Sauté onions and garlic with a half cup of water until the onions are translucent. Add whole bag of crumblers and taco seasoning to the onions in the pan. Stir well for 3-4 minutes.
Layer the remaining meat/onion mixture with beans, tomatoes, and half of your cheese in each pie shell. Top taco pie with the remaining cheese. Bake for 35-45 minutes until crust is golden brown.
Serve with sour cream, salsa, and guacamole.
Each serving (1/8 pie) yields about 200 calories. (Toppings not included in calorie count)

Running a Marathon
aka Buying a House......
I've decieded to take the plunge and go down the path of home ownership.
A good friend told me that buying a house is like running a marathon. I initially didn't believe her.
Fast forward a month later, I can see that I have just crossed the start line of this long journey. This is a huge commitment; so it is worth the many hours that get invested in the process. But, when you're in it you can get quickly overwhelmed and discouraged.
The process is tedious and long: Searching for the perfect home (which I still haven't found), financing, submitting an offer, familiarizing yourself with tons of real estate jargon. All of this along with the emotional roller-coaster ride of falling in love with a home, only to lose it to someone else.
Submitting all of my financial information to have white men in suits judge me as a person sucks. I know I'm responsible, I know I can and will pay my financial obligations. But you have to prove that to people who don't know anything about you in order to get a loan.
My student loans are stoping me from being great. And from buying the house I want.
Because of my existing student loan debt, I've been funneled into a price bracket that I'm not happy about. I'm having an extremely hard time finding something that I like in my price range that's not in a sketchy neighborhood.
I'm also trying to buy my house with down payment assistance from my job and DC government. The HPAP program gives low-moderate income people down payment assistance to aid the purchase of their first home. I don't qualify for much assistance, but every cent helps. I'll take it......But the HPAP/203K process is a beast in itself.
I won't give up. There is a house meant for me somewhere.

Deciding to Blog
I love reading. I love learning. I love life.
I've decided to start blogging for three reasons:
Since I was a kid reading has been something that I've loved. I used to read books cover to cover in one sitting. I even belonged to a book club, where books would get mailed to my house each month. (I was a nerd :) )
But thanks to finishing college and grad school, I haven't been interested in reading as many books anymore. (The love is gone y'all lol). My newfound love are blogs. I love blogs! Plus, They're the perfect length for my self diagnosed ADHD. On any given day I can spend an hour or more reading random blog posts that I find online. I've got at least 10 in my mental blog roll that I've been following for years. (I'll post those later). There's something so interesting about the lives and experiences of real people.
My attention span is telling me to wrap this post up. Enjoy my blog!

- I love reading and writing! Words are the most powerful thing I've ever encountered. You can convey and create any emotion/feeling/event with them.
- I think my life is interesting enough to share with the world (Shameless plug). Plus- I've gained so much from reading about other people, maybe someone will take value in something that I've said on here.
- 10 years from now, this blog will serve as an written snapshot of my early adulthood. The highs the lows and all the lessons along the way. Reflection is a powerful thing.
