Vegetarian Taco Pie

Ingredients:
-2 deep dish pie shells
-1 bag Morningstar crumblers
-1 cup chopped onion
-1 packet taco seasoning (I used Old El Paso)
- 1/4 cup minced Garlic
- 2/3 cup diced tomatoes
-1 can vegetarian refried beans (2 cups)
-1 & 2/3 cups of shredded Mexican blend cheese. Split into four portions.

Toppings
- Salsa
- Guacamole
- Sour Cream

This recipe makes enough filling for two deep dish pie shells.

Preparation:

Preheat oven to 350 degrees.

Sauté onions and garlic with a half cup of water until the onions are translucent. Add whole bag of crumblers and taco seasoning to the onions in the pan. Stir well for 3-4 minutes.

Layer the remaining meat/onion mixture with beans, tomatoes, and half of your cheese in each pie shell. Top taco pie with the remaining cheese. Bake for 35-45 minutes until crust is golden brown.

Serve with sour cream, salsa, and guacamole.

Each serving (1/8 pie) yields about 200 calories. (Toppings not included in calorie count)
